You can buy two types of buckwheat groats- raw and creamy, which have a mild flavour and are perfect for porridge, snack bars, stews or soups. These can take 8-30 minutes to cook depending on the brand, so check the packet! Alternatively toasted or ‘kasha’ buckwheat is darker brown/red in colour and a stronger flavour- slightly smoky- perfect with meat.
Buckwheat flour is naturally gluten-free, fine textured and has a nutty flavour. It’s not a direct substitute for wheat flour as it reacts differently, so do look for recipes that specify buckwheat flour or offer options in detail!
