The Best Squash Recipes
Tis the season to carve pumpkins and make pies (or salads or soups) and we have the best squash recipes to help inspire you!
As you may know, squashes, pumpkins and gourds all come from the same vegetable family, although they come in an amazing variety of shapes and colours! ‘Winter’ squashes have a tough outer rind, unlike ‘summer’ species, such as cucumber and courgette, which have a thin edible skin. Inside they’re all filled with hard seeds and sweet, colourful flesh with a dense, nutty flavour. They’re full of antioxidents and their seeds make a great snack! They’re pretty straightforward to grow yourself and lots of our favourites are coming into season now:
Butternut squash, as it’s name suggests, has a buttery flavour that is enhanced by brown sugar or cinnamon.
Onion squash is best used fresh in soups or risottos
Acorn squash – is small and tricky to peel, so cut in half and bake the peppery yellow middle with lots of spices
